If you follow an egg and dairy free diet but don’t want to miss out on decadent desserts then look no further! I’ve come up with a simple vegan chocolate lava cake recipe which is fool proof. With my one simple trick, you will get a molten middle every time!

Vegan Chocolate Fondant

These Vegan Chocolate Fondants have a melt in the middle chocolate centre that oozes on to the plate. But best of all, they are egg and dairy free.

  • 4 ramekins or muffin tins


  • 1 tbsp vegetable oil
  • 60 grams non-dairy butter
  • 60 grams caster sugar
  • 1 tbsp maple syrup
  • 30 grams dark chocolate
  • 60 ml soya milk
  • 60 grams self raising flour
  • 3 tbsp cocoa powder plus extra for dusting
  • 1 pinch salt
  • 1 tsp vanilla


  • Prepare your ramekins or tins by brushing them with vegetable oil then coating them in a thick lawyer of cocoa powder.
  • In a large bowl, cream together the non-dairy butter and caster sugar. Add in the banana and maple syrup and beat well until it's a thick, creamy mix.
  • Melt the dark chocolate in the microwave or over a bain marie then pour it into the other along with the plant milk. Beat until well combined.
  • Remove 4 tbsp of the mixture on to a plate and put his in the freezer for 30 minutes or until they are just firm.
  • In the meantime pre-heat the oven to 180C / 356F / gas mark 4.
  • Finish the cake batter by folding in the flour, cocoa powder, salt and vanilla paste to the remaining mix.
  • Fill your ramekins / muffin tins just half way before placing a spoonful of the frozen mix into the centre. Cover this over with the remaining cake mix.
  • Cook the cakes in the oven for 12 – 15 minutes or until the tops are just set but they still wobble slightly.
  • Remove them from the oven and give them a minute or two to cool slightly. Run a spatula round the edge of the pan and turn them out on to the plate and serve with vegan ice cream or pouring cream and fresh fruit.
