BBQ Super Duper Noodles with Chicken Tenders

For the Breaded chicken tenders

  • 2 Chicken breasts cut into chunky slices
  • panko breadcrumbs
  • 1 egg
  • 1 tbsp mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tsp paprika
  • salt and pepper to season
  • olive oil spray

Bbq super duper nooodles

  • 100 g dried udon noodles
  • 1 tbsp butter
  • 300 ml chicken stock
  • 2 tbsp BBQ sauce
  • 1 spring onion finely sliced


For the chicken tenders

  • Pre-heat your oven to 200C. Spread breadcrumbs on a baking tray, spray with oil and toast for 5 mins until golden. Remove and place in a flat bowl or plate.
  • In a bowl combine egg, mayonnaise, mustard, paprika and season. Using tongs first dredge chicken in batter, then coat in breadcrumbs, then place on baking tray. Repeat for remaining chicken
  • Spritz chicken once more with olive oil and bake in the oven for 20-25 mins depending on size of chicken bites. Turn half way

For the BBQ Super Duper Noodles

  • In a pan combine butter and BBQ sauce until combined. Add chicken stock, stir and bring to the boil
  • Add noodles, gently breaking them down. Cool on a medium heat, stirring regularly to stop noodles sticking to pan
  • When almost all the liquid has been absorbed, noodles are ready to go
  • Top with spring onion and serve
